Béta-caroteen is ook wel bekend als pro-vitamine A. In het lichaam wordt beta-caroteen slechts ten dele omgezet in vitamine A. Aangezien het lichaamniet meer béta-caroteenin vitamine A omzet dan het nodig heeft, is het gebruik van béta-caroteen een veilige maniervan vitamine A-suppletie. Het overgrote deel werkt in het lichaam als anti-oxidant.
